Single Serving Spiced Peach Cobbler – Gluten, Dairy, Egg and Nut free

I absolutely love peach cobbler. It is one of my favorite “healthy” desserts.  And if I’m completely honest, I frequently eat it for breakfast!  What I don’t want is to have to make an entire pan because I rarely have enough peaches or time to do it.  Making a gluten free, dairy free and egg free cobbler topping can just seem overwhelming on hot days when I am tired and lazy.  So when I realized we had a couple of peaches that had about 12 more hours on them before they were going to be a little too ripe, it hit me that they would be perfect for individual peach cobblers for dessert that night!  Assembling took less than 2 minutes and then they could bake while we were eating dinner!  This recipe is absolutely ridiculously easy!

All you need is 1 packet of Spice Cake Mix (you can use vanilla but the spice has all of the spices (no kidding) in it that pair so beautifully with fresh peaches!  And 1-2 Tblsp of dairy free butter, chopped into very small pieces (I use Earth Balance sticks that are soy free as well).

  1. Chop your peach, one per ramekin fits perfectly

2. Sprinkle 1/2 packet of Spice Buddy Cake Mix over peaches, into the nooks and crannies!

3. Chop butter into tiny pieces and evenly distribute over cake mix.

4. Bake at 375 for 25 minutes or so.

These are absolutely delicious!  The brown sugar in the cake mix accents the peaches with a sweet caramel syrup and the warm spices go perfectly with the peaches as well.

FOR BREAKFAST: place a dollop of vanilla yogurt on this!

FOR DESSERT: place a scoop of ice cream or whipped topping on it!
